You're a longtime guitar player so as far as a roundneck guitar played Spanish style you already know what you're doing.
When we use the term "playing dobro" it typically refers to to playing lap style on a squareneck guitar with a steel tonebar in your left hand. So the Gretsch would of course fill the bill with that technique.
I am confused - you listed two roundnecks and one squareneck as possible choices. What exactly is it you want to do?
