Is there a recommended pedal configuration to mellow the dobro? One excellent example is the sound Jerry Douglas gets with Union Station. An example would be “When You Say Nothing at All”.

Is there a dobro on the original?
In general, in addition to appropriate eq settings, something like a lush, clean reverb & light delay might be appropriate however, (imho) the biggest factor is how and __where__ the player attacks the guitar with the right hand.
Pedals get you part way there. It's largely player technique.
